Elder (Sambucus nigra, L.) is most commonly found as a woody, perennial plant species. Growing as bush or small tree. It can be found under various names such as zova, bazgovina, abdovin. It belongs to the gender Sambucus where there is 40 species, only two are used for commercial purposes. Three species are the most significant in Croatia, one is described in the master's thesis. It blooms from May to June, and the fragrant flowers are clustered into pale yellowish-colored flowers. Later the inflorescences develop into purple berries. The healing properties of elder have been known since ancient times, which has been confirmed by numerous studies. In addition to its role in ecological and organic production, it also has decorative properties. A wild plant species, it loves permeable and moist soil and it was often considered a weed by mistake. All parts of the Elder are curative and the most commonly used are inflorescences and berries. It is known that many alcoholic beverages are made from Elder such as liqueurs, wines, juices and can be used in cooking. For the purposes of this study, the Elder blossoms dried at four different temperatures of 40°C, 50°C, 60°C and 70°C, and room temperature, were used. The energy value of leaves and stems was also determined as a potential raw material for gas production, and the chemical composition was determined.
