Abstract
Sirutka je tekućina žućkasto zelene boje koja nastaje kao nusproizvod u proizvodnji sira i kazeina. Zbog visokih vrijednosti biokemijske potrošnje kisika smatra se značajnim ekološkim problemom ukoliko se nekontrolirano ispušta u okoliš. Razvojem prehrambene industrije pronađeni su načini njenog iskorištenja, a jedan od njih je proizvodnja proteina sirutke. Pravilna prehrana jedan je od najvažnijih čimbenika trenažnog procesa i postizanja sportskih rezultata. S obzirom na povećane energetske potrebe i potrebe za proteinima sportaši često pribjegavaju korištenju dijetetskih dodataka. Proteini sirutke su jedan od najzastupljenijih dijetetskih dodataka u prehrani profesionalnih sportaša, ali i rekreativaca i polaznika teretana. Konzumacija proteina sirutke ima pozitivan učinak na povećanje mišićne mase, poboljšanje sportskih performansi, no njihovo korištenje nije jednako potrebno svim navedenim skupinama.
Abstract (english)
Whey is a yellowish-green liquid formed as a by-product in the production of cheese and casein. Due to its high biochemical oxygen demand it is considered as an environmental problem if it is released into the environment. With the development of the food industry, ways have been found for its utilisation, and one of them is the production of whey protein. Proper nutrition is one of the most important factors in the training process and achieving sports results. Due to increased energy and protein needs athletes often resort to the use of dietary supplements. Whey proteins are one of the most common dietetic supplements in the diet of professional athletes, but also recreational athletes and gym participants. Whey protein consumption has a positive effect on increasing muscle mass and improving sports performance, but their use is not equally necessary for all these groups.
