Abstract
Veća potrošnja prehrambenih proizvoda, rastuće cijene sirovina i proizvoda, i intenzivna prerada mesa dovode do češćih zlouporaba mesa i mesnih prerađevina. Često se skuplje meso zamjenjuje jeftinijim, kao što je bio slučaj zamjene goveđeg mesa konjskim. Zlouporaba konjskog mesa otkrivena je sasvim slučajno 2013. godine i imala je globalni odjek jer je u aferu bilo uključeno (direktno ili indirektno) nekoliko zemlja Europske unije. Primjer zamjene goveđeg mesa konjskim potaknuo je pitanje kvalitete upravljanja opskrbnim lancem diljem Europske unije. Netočno označavanje proizvoda od mesa, ali i općenito, predstavlja rizik za potrošače. Potrošači zbog ekonomskih, vjerskih, zdravstvenih, kulturoloških i moralnih razloga izbjegavaju određene vrste mesa i bivaju dovedeni u zabludu ukoliko je proizvod označen netočnom deklaracijom. Potrošači gube povjerenje i osjećaju se prevarenima. Europska unija poduzela je niz aktivnosti, kontrola i preporuka kako bi se spriječila pojava sličnog događaja. Navedeno je rezultiralo razvojem različitih analitičkih metoda koje omogućavaju razlikovanje različitih vrsta mesa i prerađevina.
Abstract (english)
Higher consumption of food products, rising product prices and intensive meat processing lead to more frequent fraud with meat and meat products. Often, meat that is more expensive is replaced with cheaper one, as in the case of replacing beef with horse meat. The misuse of horsemeat was discovered rather accidentally in 2013 and had global repercussions, as several European Union countries were involved (directly or indirectly) in the affair. The example of replacing beef with horsemeat has raised questions about the quality of supply chain management across the European Union. Mislabelling of meat products poses a risk to consumers. Consumers avoid certain meats for economic, religious, health, cultural, and moral reasons and are misled when the product is mislabelled. Consumers lose confidence and feel cheated. The European Union has undertaken a series of activities, controls and recommendations to prevent the occurrence of a similar event. For these reasons, various analytical methods have been developed to distinguish different types of meat and processed products.
