Abstract
Tema opisuje proces planiranja prodaje proizvoda, njegove temeljne koncepte, zastupljene aktivnosti i ograničenja. Planiranje prodaje sagledano je iz perspektive organizacije koja se bavi djelatnošću pripreme i usluživanja pića. Naglasak je na prikupljanju podataka, upravljanju zaliha, promociji proizvoda te utvrđivanju alokacije kapaciteta, uz sagledavanje fluktuacije u potražnji proizvoda. Za praktični dio rada koristit će se metoda studije slučaja i SWOT analiza te doprinos u vidu predlaganja unapređenja procesa temeljem poznavanja tehnoloških mogućnosti. Pomoću linearnog programiranja, korištenjem simpleks, analitičke i grafičke metode dobit će se rješenje maksimizacije profita ugostiteljskog objekta.
