Abstract
Gastronomija se odnosi na sve vrste kuhanja, kuharskih vještina i svih ostalih aktivnosti povezanih sa njima. Ukoliko se promatra u širem smislu sastavni dijelovi gastronomije su i gurmanstvo te sladokustvo. U najširem smislu riječ je o povezanosti kultura i hrane odnosno umjetnosti prehranjivanja sa kulinarskim umjetnostima. Gastroturizam se odnosi na isprobavanje gastronomskih specijaliteta vezanih za određenu regiju ili jela poznatih kuhara koja moraju biti jedni od glavnih motiva za putovanje. U Republici Hrvatskoj postoji velik broj raznolikih, mirisom i okusom bogatih kulinarskih atrakcija upravo zbog utjecaja drugih naroda i kulture tijekom cjelokupne hrvatske povijesti. Hrvatska je mala zemlja, ali bogata glede raznovrsnosti okusa, autohtonih jela i tradicije. Gastronomska ponuda Republike Hrvatske predstavlja nedovoljno iskorišten turistički potencijal te bi svakako trebalo unaprijediti i modernizirati ponudu, u skladu sa kontinuiranim promjenama na turističkom tržištu. Cilj istraživanja u ovom radu bio je utvrditi navike prema standardima i kvaliteti gastronomske ponude u Republici Hrvatskoj. Korištena metoda ispitivanja je anketni upitnik koji je bio postavljen na internet. Ovom metodom došlo se do stavova ispitanika o standardima i kvaliteti gastronomske ponude u Republici Hrvatskoj. U suvremeno doba sve se više resursa ulaže u razvijanje turizma te se sukladno tome razvijaju novi oblici turizma usmjereni na zadovoljenje želja i potreba suvremenih turista. U Republici Hrvatskoj svakako postoje ogromni neiskorišteni potencijali za razvijanje određenih selektivnih verzija turističkih ponuda, jedan od tih selektivnih oblika je i gastronomski turizam. Kroz razvijanje gastronomske ponude utjecalo bi se povećanje potrošnje gostiju, potaknulo bi se otvaranje novih radnih mjesta te bi se utjecalo na obogaćivanje cjelokupnih turističkih ponuda u destinacijama.
Abstract (english)
Gastronomy encompasses everything related to cooking, cooking skills and related. In the broad sense it encompasses gourmet food, sweetness, and in the broadest sense, the link between culture and food, namely the art of eating, the culinary arts. Gastronomy refers to trying out gastronomic specialties related to a particular region or dishes from renowned chefs, which must be one of the main motives for traveling. Croatia boasts of its diversity and richness of intertwined flavors and aromas because of the influence of other nations and cultures throughout Croatian history. Croatia is a small country, but rich in variety of flavors, indigenous dishes and tradition. The gastronomic offer of the Republic of Croatia represents an underutilized tourism potential and should certainly improve and modernize the offer in line with the continuous changes in the tourist market. The aim of the research in this paper was to determine habits according to the standards and quality of gastronomic offer in the Republic of Croatia. The test method used is a questionnaire that was uploaded to the Internet. This method resulted in the attitudes of the respondents on the standards and quality of gastronomic offer in the Republic of Croatia. With the increasing development of tourism and the change in guest demand, new forms of tourism are emerging to meet all tourists' wishes and needs. Croatia is a country that has great potential for the development of some selective forms of tourism, and one of them is precisely gastronomic tourism. The development of gastronomy would increase the consumption of guests, create new jobs and enrich the overall tourist offer of the destination.
