Today's tourist offer isn't solely based on sun and sea, but rather on the entire package of experience. Desire for something new and undiscovered as well as the search outside of daily routine have become increasingly more common. Tourism as a globally developed branch offers exactly what the market demands – new ways for food consumption. This scientific paper is focused on analyzing the important role of gastronomy in today's tourism, but also the impact it has on developing authentic touristic experience. From topic's initial basis, and that is food and nutrition, the value of gastronomy is being enhanced. The beginnings of gastronomy itself reach out far into the history, but it wasn't until the last few year that it seized a great peak in its development and enhancement. Considering modern tourist's travel motives, gastronomy is finally recieving the recognition it fully deserves. Reason for it comes from the fact that gastronomy became much more than just food consumption, while today it's considered an entire enjoying experience. That being said, it's no surprise that over the years it became one of the main reasons for traveling. With new trends and techniques, gastronomy is being presented to readers of this paper as an entire array of options and possibilities. The highest achievement in gastronomy is by far the Michelin star which can only be given after completing a specialised list of criteria, and is primarily received by restaurants of exceptional culinary skills, creativity and quality. The analysis of seven Croatian restaurants who've received Michelin stars is provided within the paper, and the results of the analysis give us the answer to what is it that attracts and impresses the guests of those restaurants. Analysis includes menus, structure of the restaurant, atmosphere and staff. The conclusion provides explanation of scientific results, with a focus on restaurant's characteristics and its general offer.
