Abstract
Sulphur-containing plant metabolites include a variety of chemical structures, varying from primary metabolites such as sulphur-containing amino acids to secondary metabolites like, thiosulfinates, glucosinolates and others. In recent years, volatile sulphur compounds have been assigned important biological properties, including antioxidant, antibacterial, etc. The aim of the work was to uncover sulphur containing constituents of Allium species. Allium (Amaryllidaceae) is a large and very important genus which comprises of more than 500 species. Thiosulfinates and thiosulfonates are sulphuric compounds specifically found in this genus. For the purpose of isolation, The isolation of volatile compounds was carried out by hydrodistillation in Clevenger type apparatus from dry plant materials A. commutatum, A. porrum, A. sativum and A. sphaerocephalon for, , but volatile compounds from A. commutatum and A. sativum were also extracted by dichloromethane. Volatile isolates were analyzed by GC-MS method.Based on volatile degradation products, it was found that all tested species contained the following cysteine sulphoxides: Methiin, Isoaliin, Propiin. The most abundant compound in A. sativum was diallyl disulfide (39,7%) derived from Aliin, which made the plant different from other species.
