Aronia melanocarpa is a berry fruit whose juice is known for its strong antioxidant, gastro- and hepatoprotective properties. This study examined the antioxidant activity of the two different samples of chokeberry juice: "Biofructus" produced in Slavonia by cold pressing and pasteurization and "Rabenhorst" purchased on the market. Antimicrobial activity and synergistic effects of chokeberry juice in a mixture with the pathogen bacteria Listeria monocytogenes and the probiotic bacteria Lactobacillus plantarum B were also studied. The antioxidant activity of chokeberry juice was quantified using the DPPH· and TROLOX methods. The while antimicrobial activity of chokeberry juice was conducted on several bacteria: Listeria monocytogenes, Lactobacillus plantarum B and Staphylococcus aureus. Both chokeberry juices, the "Rabenhorst" and the "Biofructus" showed a high antioxidant potential, with the "Rabenhorst" juice giving a faster reaction with the DPPH radical. Different levels of inhibition have been demonstrated in L. monocytogenes and S. aureus, while L. plantarum B chokeberry juice did not show bacterial inhibition. Due to the almost complete growth L. monocytogenes inhibition and the weak inhibition of the L. plantarum B, the synergistic effect in that mixture was also examined. Depending on the mixture ratios, an inhibitory effect on the pathogenic bacterium L. monocytogenes was observed and activation effect on the probiotic L. plantarum B. This study proved the antimicrobial properties of Aronia melanocarpa chokeberry juice against L. monocytogenes and growth stimulation on L. plantarum B. Antioxidant analysis revealed the existence of different types of antioxidants in the "Biofructus" and "Rabenhorst" samples.
