Abstract Hotelijerstvo je djelatnost koja gostima pruža usluge smještaja, prehrane, točenja pića, rekreacije i raznovrsne druge usluge, a način formiranja cijena tih usluga pojašnjen je kroz ovaj završni rad teme Politika određivanja cijena unutar hotelskih poduzeća. Tema je obrađena kroz šest poglavlja, počevši od općenitih činjenica o hotelijerstvu u kontekstu gospodarske grane i definiranjem hotelskih usluga. Hotelski ugostiteljski proizvodi su raznovrsniji od smještajnih proizvoda te se zbog toga u praksi teže klasificiraju, no, unutar sustava Republike Hrvatske, prema Pravilniku o razvrstavanju, kategorizaciji i posebnim standardima ugostiteljskih objekata iz skupine Hoteli, razvrstavaju se sukladno obveznim ugostiteljskim uslugama u vrste navedene kasnije u ovome radu. S obzirom na kompleksnost turističkog i hotelskog proizvoda, nepredvidivo turističko tržište te ispreplitanja psiholoških, kvantitativnih i kvalitativnih komponenti koje utječu na hotelsku uslugu, sami hotelski menadžment mora se odlikovati karakteristikama koje za menadžment nekih drugih poduzeća gdje je tržište uravnoteženije i gdje kontakt s krajnjim korisnikom nije izravan, nisu nužne. Unutar rada definirane su i pobliže objašnjene vrste cijena hotelskih proizvoda, kao i metode na temelju kojih je cijena nekog proizvoda određena. Određivanje cijena u hotelijerstvu se razlikuje među sudionicima zbog razlike u intenzitetu i vremenu poslovanja, ali i zbog razlike u uslugama i ciljanom tržišnom segmentu. Naposlijetku, tabličnim prikazom diferencijacije u cijenama hotelskog smještaja hotelskog lanca Hilton prikazano je kako se cijene hotelskih smještajnih jedinica mijenjaju ovisno o varijacijama u količini turističke potražnje tijekom godine.
Abstract (english) Hotel management is an activity that provides guests with accommodation, food, beverage service, recreation and various other services, and the method of forming the prices of these services is explained through this final work on the topic Pricing policy within hotel companies. The topic is covered in six chapters, starting with general facts about the hotel industry in the context of the economic branch and defining hotel services. Hotel catering products are more diverse than accommodation products and are therefore more difficult to classify in practice, but within the system of the Republic of Croatia, according to the Ordinance on classification, categorization and special standards of catering facilities from the Hotels group, they are classified in accordance with mandatory catering services into the types listed later into this work. Considering the complexity of the tourist and hotel product, the unpredictable tourist market and the interweaving of psychological, quantitative and qualitative components that affect the hotel service, hotel management itself must be characterized by characteristics that are not available for the management of some other companies where the market is more balanced and where contact with the end user is not direct, are not necessary. Within the work, the types of prices of hotel products are defined and explained in more detail, as well as the methods based on which the price of a product is determined. Pricing in the hotel industry differs among participants due to the difference in the intensity and time of business, but also due to the difference in services and target market segment. Finally, the tabular presentation of the differentiation in hotel accommodation prices of the Hilton hotel chain shows how the prices of hotel accommodation units change depending on variations in the amount of tourist demand during the year.
