Abstract
Kravlje mlijeko je proizvod mliječne žlijezde ženke goveda i namirnica je iznimne nutritivne vrijednosti. Sadržava biološki vrijedne proteine čijom hidrolizom nastaju bioaktivni peptidi s antioksidacijskim svojstvima. Mlijeko je osobito dobar izvor vitamina B2 i B12 te je najznačajniji izvor kalcija u ljudskoj prehrani. Dosadašnja istraživanja ukazuju na pozitivan učinak mlijeka i njegovih komponenti na rast djece, regulaciju tjelesne mase te prevenciju osteoporoze, kardiovaskularnih bolesti, dijabetesa tipa 2 te nekih vrsta karcinoma. Negativan učinak pripisuje mu se u nastajanju karcinoma prostate, a konzumacija mlijeka može predstavljati problem i kod osoba s alergijom ili intolerancijom. U ovom završnom radu prikupljene su informacije o dosadašnjim istraživanjima utjecaja mlijeka na nutritivni status i zdravlje čovjeka.
Abstract (english)
Bovine milk is a product of female bovine mammary gland and a highly nutritious food. It contains several important nutrients. The biological value of milk proteins is high and their hydrolysis results in creation of bioactive peptides with antioxidant properties. Milk is also a good source of vitamins B2, B12 and the most significant source of calcium in human diet. Previously conducted research indicates positive effect of milk and its’ components on child growth, regulation of body mass and prevention of osteoporosis, cardiovascular disease, diabetes type 2 and some forms of cancers. On the contrary, consumption of milk is related to higher risk for prostate cancer and can be problematic for individuals with milk allergy or intolerance. This bachelor thesis summarizes currently available research findings on influence of milk on nutritional status and human health.
