Abstract
Ovaj rad opisuje metodu Procjene životnog ciklusa (LCA), glavne komponente i svrhu te povezanost sa ISO standardima. Bavi se problemom otpada u prehrambenoj industriji i općenito. Daje prikaz procjene životnog ciklusa prehrambenog proizvoda kečapa, svih faza koje obuhvaća proces proizvodnje te analizu potrošnje energije i utjecaja na okoliš – globalno zatopljenje, eutrofikacija, acidifikacija. Ukratko je opisana zero waste filozofija i naveden primjer uspješne prilagodbe proizvodnje prema načelima tog koncepta.
Abstract (english)
This thesis describes the method of Life Cycle assessment (LCA), its main elements and purpose and connection with ISO standards. It deals with the problem of waste in the food industry and in general. It gives the review of the Life Cycle Assessment of the food product – ketchup, all phases included in the production process, and analysis of energy consumption and environmental impacts like global warming, eutrophication, acidification. The Zero waste philosophy is briefly described and an example of successful adaptation in production process according to the principles of this concept is listed.
