Abstract
Istraživanje je provedeno na 35 uzoraka divlje borovnice sa 7 lokacija u Primorsko-goranskoj županiji, prikupljenih u periodu od 20. lipnja do 13. srpnja 2018. godine. Određeni su antocijani i antioksidacijska aktivnost spektrofotometrijskim metodama. Antioksidacijska aktivnost je određena dvjema metodama: DPPH (2,2-difenil-1-pikrilhidrazil radikal) i FRAP (redukcija željezova iona) metodom. Koncentracija antocijana iznosi 37,45 – 91,95 mg/100 g svježeg uzorka. Vrijednosti antioksidacijske aktivnosti određene DPPH i FRAP metodama iznose 8,90 – 13,74 mmol TE/100 g svježeg uzorka, odnosno 19,28 – 81,19 mmol Fe²⁺/100 g svježeg uzorka. Dobiveni rezultati pokazuju da divlje borovnice, ispitivane tijekom ovog istraživanja, imaju visok udio ukupnih antocijana te visoku antioksidacijsku aktivnost prema DPPH i FRAP metodi.
Abstract (english)
This research was conducted on thirty-five samples of wild bluberry (bilberry) from seven different locations in Primorje-Gorski Kotar County. The samples were collected in period from 20th June to 13th July in 2018. Anthocyanins and antioxidant activity by spectrophotometric methods were determined. Antioxidant activity was determined by using two methods: DPPH (2,2-Diphenyl-1-picrylhydrazyl Assay) and FRAP method (Ferric Ion Reducing Antioxidant Power Assay). The amount of total anthocyanins is 37,45 – 91,95 mg/100 g of fresh sample. Values of antioxidant activity, determined by DPPH and FRAP methods are 8,90 – 13,74 mmol TE/ 100 g of fresh sample, respectively 19,28 – 81,19 mmol Fe²⁺/100 g of fresh sample. The results obtained show that wild bluberries, examined during this research, have high amount of total anthocyanins and high antioxidant activity according to DPPH and FRAP method.
