Abstract
Voćne rakije su jaka alkoholna pića dobivena alkoholnom fermentacijom šećera iz voća. Karakteristika voćnih rakija je aroma koja potječe od upotrijebljene sirovine. Sirovini za destilaciju ne smiju se dodavati etilni alkohol poljoprivrednog podrijetla, tvari arome i šećer. Nakon pravilno provedenog proizvodnog procesa, dobiva se proizvod specifičnih karakteristika. Cilj ovog rada bio je odrediti udio metanola u voćnim rakijama od šljive, kruške i jabuke. Od dvadeset i tri analiziranih uzoraka voćnih rakija, u jednom uzorku (Š7 – rakija od šljiva) koncentracija metanola bila je viša od maksimalno dopuštene koncentracije propisane Pravilnikom o jakim alkoholnim pićima (NN 61/2009).
Abstract (english)
Fruit brandies are spirits produced by fruit sugar fermentation. The characteristic of fruit brandies is the aroma that originates from the raw material used. Ethyl alcohol of agricultural origin, flavorings and sugar may not be added to the raw material intended for distillation. At the end of the properly performed production process, a product with specified characteristics is obtained. The aim of this study was to determine the methanol content in apple, pear and plum brandies. The methanol concentration in one sample was higher than the maximum concentration allowed in the rules and regulations for spirits.
