Abstract
Voda ima važnu ulogu u svim granama prehrambene industrije. Ona je obnovljiv izvor, no dostupnost joj nije neograničena. Vodeni otisak je važan dio procjene potrošnje vode u industriji. Dijeli se na plavi, zeleni i sivi. Plavi se odnosi na potrošnju slatke vode, zeleni na oborine, a sivi na razrjeđivanje onečišćujućih tvari iz otpadnih voda. Procjenjuje se za operativni dio koji uključuje vodu korištenu u procesu proizvodnje i ugrađenu u proizvod te za opskrbni lanac koji obuhvaća sve sirovine i ambalažu. Prehrambena industrija je među prvima koja je koristila taj sustav procjene potrošnje vode. On je važan čimbenik u kolektivnom upravljanju resursima vode koji proizlaze iz korporativne održivosti čiji je zadatak napredak uz istovremeno poštivanje načela održivog razvoja zbog ograničenosti resursima. Pritom je važno utvrditi kritične procese i sirovine, ali i paziti na otpadne vode kako bi se postigla održivost resursa vode i zadovoljila društvena odgovornost.
Abstract (english)
Water plays an important role in all aspects of the food industry. It is a renewable resource, but it is not unlimited. The water footprint (WF) is an important part of evaluating water use in the industry. It is divided into blue, green and grey WF. Blue refers to freshwater consumption, green to precipitation, and grey to dilution of pollutants from wastewater. It can be estimated as operational water footprint, which includes water used in the production process and water contained in the product, and supply chain WF, which includes all raw materials and packaging. The food industry is one of the first industries to use this system to estimate water consumption. It is an important factor in corporate water management as part of corporate sustainability, whose mission is to make profits while respecting the principles of sustainable development, since resources are limited. At the same time, it is important to determine the critical processes and raw materials, as well as wastewater treatment, in order to achieve sustainability of water resources and meet social responsibility.
