Abstract
Zbog zaštite zdravlja i dobrobiti dojenčadi, izuzetno je važan sastav te nutritivna kvaliteta dojenačkih formula, ali i ispravno doziranje. Stoga je cilj ovog rada bio analizirati i usporediti energetski sastav i zastupljenost makronutrijenata u pet različitih dojenačkih formula te ispitati potencijal primjene blisko-infracrvene spektroskopije u praćenju spomenutog. Korištena laboratorijski i prijenosni NIR uređaji, koji snimaju uzorke na molekularnoj razini, u vibracijskom spektru 900 – 1699 nm. Dojenačkim formulama mjereni su i parametri boje te vodljivost i ukupne otopljene tvari. Primjenjeni su kemometrijski alati kako bi se istražile sličnosti i/ili razlike među uzorcima. Analizirane dojenačke formule namijenjene su dojenčadi s osjetljivim probavnim sustavom ili potvrđenom alergijom na proteine kravljeg mlijeka. Za svaku dojenačku formulu pripremljen je broj uzoraka koji odgovara različitoj dobi, prema uputi na deklaraciji proizvoda. Dobiveni NIR spektri kombinirani su s kemometrijskim metodama, konkretno analizom glavnih komponenata i regresijom glavnih komponenata te su pokazali visoku primjenjivost, kvalitativno i kvantitativno.
Abstract (english)
To protect infants’ health and wellbeing, not only infant formulas’ composition is important, but also their dosing. Therefore, the aim of this work was to analyse and compare the energy content along with macronutrient composition in five infant formulas and check the potential near-infrared spectroscopy in sample analysing. Two different NIR spectrometers were being used (laboratory and portable), which analyse samples on molecular level, in vibrational spectrum from 900 to 1699 nm. Analysis of five different infant formulas was conducted, whether for sensitive baby's digestive system or hypoallergenic. Several samples were made for every infant formula, according to instructions on packaging. In addition, colour parameters were measured. Conductivity and total dissolved solids were determined, for the purpose of detecting similarities and/or differences between samples. The recorded NIR spectra was combined with chemometric methods, precisely with principal component analysis and principal component regression and has shown high applicability.
