Abstract
Cilj ovog istraživanja bio je ispitati prisutnost ergot alkaloida (EA) u uzorcima zobi, ječma, pšenice i kukuruza prikupljenim tijekom 2023. godine s polja hrvatskih proizvođača te utvrditi količine EA koje bi uzrokovale akutnu ili kroničnu toksičnost kod ljudi na temelju rezultata za sirove žitarice. Od ukupno 75 analiziranih uzoraka, 21 je bio pozitivan na prisutnost EA, pri čemu četiri uzorka ne odgovaraju europskim zakonskim propisima vezanim uz hranu za ljude. Visoka razina kontaminacije uočena je u zobi (60 % uzoraka kontaminirano; maksimalno 3200 µg/kg) i pšenici (44 %; maksimalno 159,10 µg/kg), dok nešto niža razina kontaminacije u ječmu (20 %; maksimalno 450,60 µg/kg). U niti jednom uzorku kukuruza nisu detektirani EA. Sirove žitarice nisu direktno konzumirane od strane ljudi, a procesi njihove obrade potencijalno mogu utjecati na koncentraciju EA, smanjujući tako njihovu prisutnost i toksičnost u gotovim proizvodima.
Abstract (english)
The aim of this study was to investigate the presence of ergot alkaloids (EA) in samples of oats, barley, wheat, and maize collected during 2023 from Croatian fields and to determine amounts of EA that would cause acute or chronic toxicity in humans based on results for raw grains. Out of a total of 75 analyzed samples, 21 tested positive for the presence of EA, with four samples not complying with the European legal regulations related to human food. High contamination levels were observed in oats (60 % of samples contaminated; max 3200 µg/kg) and wheat (44 %; max 159.10 µg/kg), while a slightly lower contamination level was found in barley (20 %; max 450.60 µg/kg). None of the maize samples tested positive for the presence of EA. Raw cereal grains are not directly consumed by humans, and processing procedures may potentially affect the concentration of EA, thus reducing their presence and toxicity in finished products.
