In this study were analyzed samples of two pumpkin varieties of the Cucurbita maxima (Hokkaido and Kabocha), obtained in two academic years: 2014/2015 and 2013/2014. The last year samples are processed by reflux extraction and an extraction in the ultrasound bath. The concentration of phenolic compounds was determined by the Folin-Ciocalteu method while the antioxidant activity of samples was determined by DPPH method. The aim of this study was to determine the specific content of beta-carotene, lycopene, chlorophyll, vitamin C in this year samples, and also to determine total phenolic concentration and antioxidant activity of all samples. The obtained results were then compared with the data of last year samples. The results showed that the best antioxidant activity, with respect to all samples, has a sample of Hokkaido pumpkin processed by reflux extraction (394,99±0,007 μmol TE·10 g-1 sample), while the lowest value was detected for the Hokkaido pumpkin from this year (305,19±9,58 μmol TE·10 g-1 sample). The highest content of phenolic compounds showed this year sample of Kabocha pumpkin (2208,44±129,82 mg GAE L-1), followed by the sample of this year Hokkaido pumpkin (894,85±276,43 mg GAE L-1), while the lowest content was detected for the sample of Kabocha pumpkin processed by reflux extraction method (379,74±177,47 mg GAE L-1).
