Abstract
Mikotoksini su toksični metaboliti plijesni koji narušavaju zdravlje ljudi i životinja. Zaštita hrane i hrane za životinje od mikotoksina mora se provoditi kroz cijeli prehrambeni lanac. Mogu se naći u žitaricama i proizvodima na bazi žitarica, a u organizam ulaze najčešće putem hrane, uzrokujući oboljenja zvana mikotoksikoze. U radu su opisani akutni i kronični učinci aflatoksina B1 (AFB1) i okratoksina A (OTA). AFB1 je mikotoksin kojeg sintetiziraju plijesni uglavnom roda Aspergillus. Pripisuje mu se karcinogenost, mutagenost, teratogenost i imunosupresivno djelovanje te ima najjače hepatokarcinogeno djelovanje na sisavce. OTA je nefrotoksin koji proizvode plijesni iz rodova Aspergillus i Penicillium s potencijalnim karcinogenim djelovanjem u ljudi, koji se dovodi u vezu s razvojem endemske nefropatije. U ovom radu određene su količine aflatoksina B1 i okratoksina A ELISA metodom u odabranim uzorcima žitarica; pri čemu su najviše količine AFB1 (60,6 µg kg-1) i OTA (82,4 µg kg-1) nađene u uzorcima kukuruza.
Abstract (english)
Mycotoxins are toxic metabolites of moulds which have a negative influence on human and animal health. Protection of food and feed from mycotoxins has to be conducted trough entire food chain. They can be found in cereals and cereal products and are introduced into the organism mostly by food, causing illnesses called mycotoxicosis. In this paper are described acute and chronic influences of aflatoxin B1 and ochratoxin A. AFB1 is a mycotoxin produced by moulds mainly from Aspergillus genus. It is considered to be cancerous, mutagen, teratogenic and immunosuppressive and the strongest hepatocancerogen for mammals. OTA is nephrotoxin produced by moulds from genuses Aspergillus and Penicillium with potential cancerous effect in humans, which is involved in development of endemic nephropathy. In this paper, the contents of AFB1 and OTA in chosen samples of cereals, are determined by ELISA method; the highest contents of AFB1 (60,6 µg kg-1) and OTA (82,4 µg kg-1) were found in corn samples.
