Abstract
Cilj rada je istražiti spoznaje potrošača u Bosni i Hercegovini o kvaliteti konzumnih jaja, kao i utvrditi koje parametre kvalitete jaja proizvođači smatraju važnima. U tu svrhu provedeno je anketno istraživanje. Prema rezultatima anketnog istraživanja većinu ispitanih čine muškarci 56,16%, a najveći broj ispitanika 33,56% je u životnoj dobi od 31 do 40 godina. Najveći broj ispitanika konzumira jaja svakodnevno (57,3%) ,a najčešće ih kupuje u trgovini 32,19%. Rezultati ankete pokazali su kako je za potrošače konzumnih jaja u Bosni i Hercegovini podrijetlo značajan parametar na koji obraćaju pozornost, tako njih 97,95% bira domaće proizvođače, a 56,16% bira određene proizvođače prilikom kupovine jaja. Udio od 50,0% potrošača odlučuje se za kupovinu jaja veće mase koja spadaju u L tržišni razred. Veliki broj ispitanika nije upoznat s pojmom dizajnirana jaja (71,23%). Jaja se u kućanstvima najčešće pripremaju kombinirano za pripravak drugih jela, što je istaknulo čak 56,6%. Za potrošače je najvažnija prehrambena kvaliteta proizvoda (76,03%). Kao najveću prednost jaja u odnosu na ostale prehrambene namirnice 47 ispitanika navelo je laku i brz pripremu jaja, dok 44 ispitanika kao prednost navodi hranjivu vrijednost jaja. Kao najveći nedostatke pri kupovini i konzumaciji jaja ispitanici su naveli višak kolesterola, kraći rok trajanja i laku mogućnost oštećenja jaja.
Abstract (english)
The aim of this work is to explore the knowledge of consumers in Bosnia and Herzegovina about the egg quality, as well as to establish the egg quality parameters that producers considere important. For this purpose, poll researche was established. According to the researche results the majority of respondents were men 56,16%, and the highest number of respondents 33,56% were in age from 31 to 40 years. Most of the respondents consumes eggs daily (57,3%), and they are mostly bought in the store 32,19%. Results of the researche showed that for egg consumer in Bosnia and Herzegovina significant parameter that they pay attention is origin, so 97,95% of them elects local producers, and 56,16% elects certain producers during the egg purchase. A share of 50.0% of consumers decides to buy a larger egg masses which are in L market class. A large number of respondents were not familiar with the term designed eggs (71,23%).Eggs are usually in households prepared combined for preparation of other dishes, as highlighted even 56.6%. For consumers, the most important is food product quality (76,03%). As the biggest advantage of eggs compared to other foodstuffs, 47 respondents have stated easy and quick preparation of eggs, while 44 respondents as advantagehave stated the nutritional value of eggs. As the biggest disadvantages in the purchase and consumption of eggs respondents have stated excess of cholesterol, a shorter duration and good possibility of eggs damage.
