Abstract
Nitrati su zbog načina proizvodnje, potrebe za gnojidbom i drugim proizvodnim čimbenicima neizbježan dio asimilata nakupljenih u povrću. Neke biljne vrste su zbog svojih prirodnih genetskih obilježja sklonije nakupljanju nitrata od drugih, istu značajku imaju i pojedine sorte u odnosu na druge. S obzirom na zanemarivu, ili eventualno malu mogućnost utjecaja na nakupljanje nitrata u biljkama, postoje aktivnosti nakon berbe kojima je moguće reducirati udio nitrata. Zakonodavni okviri propisuju dopuštene količine nitrata u povrću. Iako se i prirodno nalaze u ljudskom organizmu, unos nitrata kroz hranu može predstavljati potencijalni rizik za zdravlje. Nitrati često nisu ti koji predstavljaju direktan problem ljudskom organizmu, ali uslijed kontakta s bakterijama i enzimima u probavnom procesu organizma, dolazi do prijelaza nitrata u nitrite, a kasnije i do dušikovog oksida, te postoji opasnost do stvaranja nitrozamina. Istraživanja pokazuju različite podatke o kancerogenosti nitrata za organizam, ali isto tako postoje indicije da nitrati imaju blagotvorno djelovanje na kardiovaskularni sustav. Ljudsko zdravlje je prioritet, te je upravo zbog toga potrebno nastaviti istraživati navedenu temu, s obzirom na sve veću izloženost nitratima.
Abstract (english)
Nitrates are an inevitable part of assimilates accumulated in vegetables due to the method of production, the need for fertilization, and other production factors. Due to their natural genetic characteristics, some plant species are more prone to nitrate accumulation than others, and some varieties have the same characteristics compared to others. Due to the negligible, or the possibly small possibility of influencing the accumulation of nitrates in plants, there are post-harvest activities that can reduce the proportion of nitrates.Legislative frameworks prescribe permissible levels of nitrate in vegetables. Although naturally occurring in the human body, nitrate intake through food can pose a potential health risk. Nitrates are often not a direct problem for the human body, but due to contact with bacteria and enzymes in the body's digestive process, nitrates are converted into nitrites, and later nitric oxide, and there is a risk of nitrosamine formation. Studies show different data on the carcinogenicity of nitrates to the body, but there are also indications that nitrates have a beneficial effect on the cardiovascular system. Human health is a priority, and that is why it is necessary to continue researching this topic, given the increased exposure to nitrates.
