Abstract
Cilj ovog završnog rada bilo je prikazati obiteljsko poljoprivredno gospodarstvo Kundakčić te opisati proizvodnju i tehnološke procese proizvodnje kulena na ovom obiteljskom gospodarstvu, kao i čimbenike koji utječu na kvalitetu sirovine za proizvodnju kulena. U radu su prikazani brojni čimbenici koji mogu utjecati na kakvoću mesa te posljedično kakvoću proizvoda, poput pasmine, dobi, spola životinje te proizvodnog sustava u kojem su uzgojene, kao i načini na koje možemo utjecati na kakvoću sirovine, kao što su manipulacija hranidbom i postupci sa životinjama prije klanja.
Abstract (english)
The aim of the thesis was to present the Kundakčić family farm and to describe the technological processes of kulen production on this family farm. Numerous factors that can influence the meat quality and thus also the quality of the kulen, such as breed, age and sex of the animal, as well as the production system in which the animal is produced, are described in the thesis. A brief summary of ways to influence raw meat quality, such as feed manipulation or manipulation with the animals before slaughter, was also described.
