Abstract
U zadnjih nekoliko godina interes potrosaca za kvalitetnom i nutritivno bogatom hranom, koja sadrzi komponente s potencijalnim pozitivnim ucinkom na zdravlje ljudi, u velikom je porastu. Znacajan segment u kategoriji funkcionalnih proizvoda predstavljaju funkcionalni napitci. Moderni funkcionalni napitci odraz su dinamicnih novih trendova u prehrambenoj industriji. Funkcionalnim napitcima dodaju se razlicite aktivne tvari u obliku izoliranih sastojaka i ekstrakta iz hrane i bilja, sve sa ciljem poboljsanja opceg zdravlja ljudi. U ovom diplomskom radu cilj je bio utvrditi koje ,,klasicne" anione sadrze uzorci funkcionalnih voda dostupnih na trzistu te u kojoj koncentraciji. Rezultati su dobiveni postupcima analize uzoraka voda tehnikom ionske kromatografije primjenom ionskog kromatografa ICS 2000 Dionex. Analiza je pokazala prisutnost acetata, fluorida, fosfata klorida i sulfata. Analiza je takoder pokazala i prisutnost velike kolicine jos jednog, najvjerojatnije organskog aniona. Dobivene vrijednosti aniona u ispitivanim uzorcima usporedene su s maksimalno dopustenim vrijednostima koncentracija aniona koje su navedene u Pravilniku o zdravstvenoj ispravnosti. Svi odredeni anioni izuzev fluorida nalaze se u dozvoljenim rasponima prema gore navedenom Pravilniku. Provedena multivarijatna analiza glavnih komponenata i klasterska analiza pokazala je da su fluoridi - ionska vrsta koja izaziva najvazniju varijabilnost kod svih ispitivanih uzoraka. Prema sadrzaju aniona ispitivani uzorci su grupirani u dva glavna klastera.
Abstract (english)
In recent years, there has been an increase in demand for nutritious and high quality foods that contain ingredients with potential impact on health. Functional beverages represent a significant segment in the functional products category. Modern functional beverages reflect new dynamic trends in the food industry. Various active ingredients are added to functional beverages in the form of isolated substances, food and plant extracts with the aim of improving overall health. In this work, it was investigated which "basic" anions are present in the functional bottled water products on the market and in what concentration. Results were obtained by analyzing water samples using the ICS 2000 Dionex ion exchange chromatograph. The analysis showed the presence of acetate, fluoride, phosphate chloride and sulfate. A large concentration of another, probably organic, anion was found by our analysis. The obtained values of anions in the tested samples were compared with the maximum allowable values of anion concentrations given in the Health Protection Ordinance. All the determined anions except fluoride are within the permissible ranges according to the above mentioned regulation. The multivariate principal components analysis and cluster analysis carried out showed that fluorides are the ion species causing the highest variability in all the samples studied. According to the anion content, the investigated samples were divided into two main clusters.
