Abstract
Biljna ulja su organski spojevi, esteri alkohola glicerola i masnih kiselina, a sadrže i negliceridne sastojke (pigmenti, tokoferoli, voskovi, steroli, fosfolipidi i dr.). Biljna ulja sadrže dvije esencijalne masne kiselin (linolna i linolenska) koje naš organizam ne može sintetizirati već ih unosimo isključivo hranom. Ulja linolnog tipa s visokim udjelom linolne masne kiseline (suncokretovo ulje do 75%) imaju značajnu biološku vrijednost. Primjena ulja linolnog tipa vrlo je raširena od prehrambene, kozmetičke i drvne industrije pa sve do upotrebe u medicini, slikarstvu, domaćinstvu i dr. Cilj ovog rada je predstaviti neka od najpoznatijih biljnih ulja linolnog tipa: suncokretovo, sojino, kukuruzno i ulje šafranike te područje uzgoja njihovih uljarica, sastav i karakteristike ulja kao i njihovu primjenu.
Abstract (english)
Vegetable oils are organic compounds, i.e. esters of the alcohol glycerol and fatty acids also containing unglyceride compounds (pigments, tocopherols, wax, sterols, phospholipids...). Vegetable oils contains two esential fatty acids (linoleic and linolenic) wchich our organism isn't capable to synthesize on it's own, so we have to intake them through food. Linoleic type oils with high concentration of linoleic fatty acid (sunflower oil – 75%) have significant biological value. Linoleic-type oils are widely used in different industries such as food processing, cosmetics and wood processing, but also in medicine, artistic painting and in households. The purpose of this paper is to consider some of the commonest vegetable oils of this type: sunflower, soybean, corn, and safflower, and to present the areas where those plants are grown, as well as oil composition, characteristics and applications.
