Abstract
Pjene su sustavi koji nastaju kada se plinovi rasprše u tekućinama na sitne mjehuriće. One imaju definiranu strukturu i morfološki se mogu podijeliti u dvije skupine. Kuglaste pjene koje se sastoje od široko razdvojenih mjehurića te poliedarske pjene koje imaju mjehuriće poliedarskog oblika. Osim toga, pjene se razlikuju kao tekuće i krute. Najznačajnije svojstvo pjena je niska gustoća i velika površina. Primjenjuje se u svim granama industrije, a vrlo značajnu ulogu imaju u prehrambenoj industriji. U ovom radu cilj je bio opisati osobine i svojstva pjena, stvaranje pjena te kontrolu pjenjenja. Dana je i primjena pjena u svakodnevnom životu te u prehrambenoj industriji.
Abstract (english)
Foams are systems that are created when the gases are scattered in liquids in the shape of small bubbles. They have a defined structure and morphologically can be devided into two groups. Spherical foams consisting of widely separated bubbles and polyhedral foams that are polyhedral in shape. In addition, foams differ as liquid and solid foams. The most important feature of foam is low density and large surface. They can be applied in all brunches of industry, and play a very important role in the food industry. In this work, the aim was to describe foam characteristics and properties, foam formation and foaming control. The use of foams in everyday life and in the food industry is also described.
