Abstract | Beta-glukan je polisaharid izgrađen od glukoznih jedinica međusobno spojenih β-1,3- ili β- 1,4-glikozidnim vezama. Epidemiološke studije potvrdile su pozitivan utjecaj beta-glukana na zdravlje ljudi, a očituje se u jačanju imunološkog sustava, sprječavanju kardiovaskularnih i gastrointestinalnih bolesti, zatim kod liječenja kožnih bolesti, prehlada i viroza. Prirodni izvori beta-glukana su žitarice. Prema sadržaju beta-glukana, najbogatije su ječam, zob i pšenica. Zakonodavstvo Republike Hrvatske podijelilo je proizvode od žitarica na žitne pahuljice, muesli proizvode, ekstrudirane proizvode od žitarica i instant proizvode od žitarica. Zahtjevi za pakiranje žitarica, ali i zahtjevi koje treba popuniti ambalažni materijali pri odabiru za pakiranje žitarica za doručak su zaštita od vlage, svjetlosti, temperaturnih promjena, mehaničkih oštećenja, prodora mikroorganizama i utjecaj stranih, nepoželjnih mirisa. Ambalažni materijali koji se najčešće upotrebljavaju za kreiranje ambalaže za pakiranje žitarica za doručak su papir, karton, višeslojni materijali i polimerne mase, a u obliku kutija, vrećica, čašica te kao zatvarači. Stoga je zadatak ovog završnog rada opisati žitarice za doručak, zahtjeve za pakiranje, ambalažne materijale koji se upotrebljavaju za pakiranje žitarica za doručak te navesti i opisati na primjerima vrste pakiranja žitarica za doručak. |
Abstract (english) | Beta-glucan is a polysaccharide made of glucose units connected by β-1,3- or β-1,4- glycosidic bonds. Epidemiological studies have confirmed the positive influence of beta-glucans on human health, and are reflected in the strengthening of the immune system, prevention of cardiovascular and gastrointestinal diseases, then in the treatment of skin diseases, colds. Natural sources of betaglucans are grains. According to the beta-glucan content, the most abundant are barley, oats, and wheat. Legislation of the Republic of Croatia divided cereal products into cereal flakes, muesli products, and extruded and instant cereal products. The requirements for the packaging of cereals, as well as the requirements for packaging materials for the selection of breakfast cereal packaging, are protected against moisture, light, temperature changes, mechanical damage, and penetration of microorganisms and the influence of foreign undesirable odours. Packaging materials that are commonly used to create packages for breakfast cereals are paper, cardboard, multilayer materials and polymeric masses in the form of boxes, bags, cups and closures. Therefore, the task of this work is to describe breakfast cereals, packing requirements, packaging materials used for packing breakfast cereals and listing and describing examples of types of breakfast cereal packaging. |
