Abstract
Konduktometrija je elektroanalitička tehnika pomoću koje se mjeri električna vodljivost. Električna vodljivost je brzina prijenosa električnog naboja kroz neki analit. Mjerenje se odvija pomoću konduktometrijske ćelije koja je najčešće staklena, dok su elektrode platinske pločice. Uređaj za mjerenje električne vodljivosti odnosno električnog otpora naziva se konduktometar. Primjena konduktometrije je široka te uz mjerenje pH vrijednosti otopina je najčešće korištena elektroanalitička tehnika. Također, uz konduktometriju, konduktometrijska titracija je zastupljena za praćenje kemijskih reakcija (točka ekvivalencije). Zadatak ovog završnog rada je opisati elektroanalitičku metodu konduktometrije, objasniti princip mjerenja i opisati primjenu u prehrambenoj industriji.
Abstract (english)
Conductometry is an electroanalytical technique used to measure electrical conductivity. Electrical conductivity is the rate of transfer of an electric charge through an analyte. The measurement is performed using a conductometric cell, which is usually glass, while the electrodes are platinum plates. A device for measuring electrical conductivity or electrical resistance is called a conductometer. The application of conductometry is wide, and in addition to measuring the pH value of solutions, the most commonly used electroanalytical technique. Also, in addition to conductometry, conductometric titration is represented to monitor chemical reactions (equivalence point). The aim of this work is to describe the electroanalytical method of conductometry, to explain the principle of measurement and to describe the application in the food industry.
