Abstract
Jedan od najvažnijih elemenata prilikom konzumacije hrane je sigurnost hrane. Osnovna zadaća proizvođača je tržištu ponuditi zdravstveno ispravnu i sigurnu hranu. Različite opasnosti se mogu prenijeti na hranu, i tako dovesti do zaraznih bolesti, ukoliko se zaposlenici koji rukuju hranom ne pridržavaju pravilnih osobnih higijenskih navika. Zato zaposlenici moraju biti upoznati s pravilnim provođenjem osobne higijene i higijene pogona. To se postiže raznim edukacijama ili internom izobrazbom. Cilj ovog rada je dati pregled postupaka kojima se održava razina osobne higijene djelatnika u posluživanju hrane na zadovoljavajućoj razini te prikazati znanja, navike i odstupanja radnika prilikom održavanja osobne higijene prema propisanim postupcima. Na temelju znanstvenih radova u kojima su provedena ispitivanja higijenskih navika, rezultati su pokazali kako zaposlenici poštuju pravila osobne higijene.
Abstract (english)
One of the most important aspects of consuming food is food safety. Every producer must offer healthy and safe food on the market. Various hazards can be transmitted to food and thus lead to infectious diseases if food-handling employees do not adhere to proper personal hygiene. Therefore, employees must be familiar with general food safety measures and regulations related to the maintenance of personal hygiene, which is achieved through various educations or internal training. The aim of this undergraduate thesis is to give an overview of procedures that maintain the level of personal hygiene in serving food at a satisfactory level and to show the knowledge, navigation and deviation of workers in maintaining personal hygiene according to prescribed procedures. Based on scientific papers in which hygienic navigation tests were conducted, the results showed that employees respect the rules of personal hygiene.
