Abstract
Membranski procesi se sve više upotrebljavaju u industriji zbog prednosti u odnosu na druge tehnologije. U tehnologiji vina zauzimaju značajno mjesto kao jedan od postupaka bistrenja i stabilizacije vina. Primjenom membranske filtracije u procesu proizvodnje vina postiže se uklanjanje svih čestica mutnoće, mikroorganizama, otopljenih nestabilnih proteina, postiže se bolja kvaliteta i održljivost vina, manje procesiranje vina i dr. Postoji više vrsta membranskih procesa ( reverzna osmoza, nanofiltracija, ultrafiltracija i mikrofiltracija) od kojih se za filtraciju vina primjenjuje mikrofiltracija. Od ostalih membranskih procesa u tehnologiji vina se može primijeniti nanofiltracija u kombinaciji s reverznom osmozom za koncentriranje mošta u svrhu korekcije udjela šećera u moštu.
Abstract (english)
Membrane processes are increasingly used in industry because of the lots of adantages compared to other technologies. The technology of wine take up a significant place as one of procedures of clearing and stabilization of wine. Using membrane filtration in the process of production of wine achieves the removal of all fuzziness particles, microorganisms, dissolved unstable protein, are better quality and longevity of wines, wine less processing, etc. There are several types of membrane processes (Reverse osmosis, nanofiltration, ultrafiltation and microfiltration) of which for wine filtation applied microfiltration. From other processes in membrane technology wine can be applied nanofiltration in combination with reverse osmosis for concentation of must for the purpose of correcting the share of sugar in the must.
