Abstract
Svrha rada je opisati proces proizvodnje predikatnih vina. Predikatna vina su vina koja se proizvode u dobrim godinama i prikladnim uvjetima. Grožđe se najčešće bere nakon uobičajenog vremena berbe, kada ono postane prezrelo. Od predikatnih vina, najkvalitetnije je ledeno vino. Proizvodnja predikatnih vina nastala je u Austriji i Njemačkoj, zemljama kontinentalne klime. U posljednjih nekoliko godina povećano je zanimanje malih proizvođača u Hrvatskoj za proizvodnju predikatnih vina. Predikatna vina su uglavnom slatka vina s obzirom da se dobivaju od grožđa koje je ubrano prezrelo, ali ipak udio ukupnih kiselina im je visok. Šećer i kiseline se nadopunjuju i daju jedan harmoničan, specifičan okus. Kod svih tipova predikatnih vina vodeća sorta je graševina. Od ostalih sorti valja izdvojiti: traminac, pinot, rajnski rizling, sauvignon, muškat otonel i žuti itd.
Abstract (english)
The goal of the thesis was to describe the production of predicate wines. Predicate wines are wines that are produced in good years and in suitable conditions. Grapes are usually harvested after the usual harvest time, when it become overripe. Of the predicate wines, ice wine is the best. The production of predicate wines originated in Austria and Germany, countries with a continental climate. In the last few years, the interest of small producers in Croatia in the prodaction of predicate wines has increased. Predicate wines are mostly sweet wines, given that they are obtained from grapes that have been harvested too ripe, but still the proportion of total acids is high. Sugar and acids complement each other and give a harmonious, specific taste. In all types of predicate wines, the leading variety is Graševina. Of the other varieties, we should distinguish: Traminac, Pinot, Rhine Riesling, Sauvignon, Muscat Ottonel and yellow, ect.
