Abstract
Kronopotenciometrija je elektrokemijska tehnika. Temelji se na mjerenju promjene potencijala elektrode tijekom elektrolize otopine elektroaktivnih analita koje se određuju kao što su metali. Kroz otopinu teče struja stalne jakosti. Protjecanjem struje, potencijal se s vremenom mijenja zbog postupnog izlučivanja analita na površini radne elektrode. Ova tehnika omogućuje određivanje koncentracije elektroaktivnih analita i istraživanje mehanizma elektrokemijskih reakcija. Kronoamperometrija predstavlja mjerni postupak kojim se potencijal radne elektrode mijenja, a struja se bilježi kao analitički signal. U obje elektrokemijske tehnike zabilježeni maksimum struje proporcionalan je koncentraciji analita u otopini. Ove elektrokemijske tehnike mogu se provoditi i u protoku te se tada nazivaju protočne elektrokemijske tehnike. Cilj ovog završnog rada je definirati i opisati elektrokemijske tehnike koje se primjenjuju za analizu hrane s naglaskom na protočne elektrokemijske tehnike kao što su protočna kronopotenciometrija i protočna kronoamperometrija te njihova primjena za analizu metala u uzorcima hrane. Detaljnije bi se opisala identifikacija i kvantifikacija nekih metala primjenom protočne kronopotenciometrije i protočne kronoamperometrije u uzorcima hrane.
Abstract (english)
Chronopotentiometry is an electrochemical technique. It is based on the measurement of the change in electrode potential during the electrolysis of a solution of electroactive analytes to be determined, such as metals. A current of constant strength flows through the solution. As the current flows, the potential changes over time due to the gradual excretion of the analyte on the surface of the working electrode. This technique enables the determination of the concentration of electroactive analytes and the investigation of the mechanism of electrochemical reactions. Chronoamperometry is a measurement procedure by which the potential of the working electrode changes, and the current is recorded as an analytical signal. In both electrochemical techniques, the recorded maximum current is proportional to the analyte concentration in the solution. These electrochemical techniques can also be carried out in flow and are then called flow electrochemical techniques. The aim of this thesis is to define and describe electrochemical techniques used for food analysis with an emphasis on flow electrochemical techniques such as flow chronopotentiometry and flow chronoamperometry and their application for the analysis of metals in food samples. The identification and quantification of some metals using flow chronopotentiometry and flow chronoamperometry in food samples would be described in more detail.
