Abstract
Cilj ovog diplomskog rada bio je ispitati utjecaj različitih proizvodnih postupaka poput dvostruke i trostruke destilacije te destilacije različitim uređajima na kvalitetu votke od batata. Batat za proizvodnju votke je procesiran mljevenjem i ukomljavanjem prije fermentacije. Nakon fermentacije, provedena je dvostruka destilacija na destilacijskoj koloni dok je treća destilacija provedena na destilacijskom kotlu, destilacijskoj koloni i vakuum destilacijom. Svi dobiveni destilati su filtrirani kroz aktivni ugljen, a na dobivenim proizvodima su određeni sljedeći parametri: udio etanola, ukupnog ekstrakta, udjela ukupnih kiselina te pojedinačnih kongenera.
Abstract (english)
The aim of this thesis was to examine the influence of different production processes such as double and triple distillation and distillation with different devices on the quality of sweet potato vodka. Sweet potatoes for the production of vodka was processed by grinding and crushing before fermentation. After fermentation, a double distillation was carried out on a distillation column, while the third distillation was carried out on a still, a distillation column and vacuum distillation. All obtained distillates were filtered through activated carbon and the following parameters were determined on the obtained products: the proportion of ethanol, the total extract, the proportion of total acids, and individual congeners.
