Abstract | U laboratorijskoj praksi određuju se fizikalna, kemijska i higijenska (somatske stanice i mikroorganizmi) svojstva mlijeka. Od fizikalnih svojstava određuju se gustoda, točka ledišta, kiselost po °SH i pH vrijednost mlijeka. Od kemijskih svojstava najčešde se određuje količina bjelančevina, mliječnog šećera i mliječne masti, a potom izračuna količina bezmasne suhe tvari. Od higijenskih svojstava određuje se ukupan broj mikroorganizama (bakterija) u mlijeku.
Laboratorijskim analizama mogu se utvrditi sve promjene fizikalnih, kemijskih i higijenskih svojstava mlijeka koje su posljedica poremećene sinteze, lučenja mlijeka u mliječnoj žlijezdi (promjene uzrokovane bolešću, nepravilnom hranidbom, pogrešnom mužnjom i drugim čimbenicima), postupka mužnje te postupanja s mlijekom nakon mužnje. Pored spomenutih, u svakodnevnu praksu ulaze i analize za otkrivanje inhibitornih tvari u mlijeku, npr. ostaci pesticida, antibiotika, teških metala, dezinficijensa i drugih tvari štetnih za preradu mlijeka i zdravlje ljudi.
Zdravstvena (higijenska) ispravnost mlijeka kontrolira se određivanjem broja i vrste mikroorganizama u mlijeku. Takve su analize jako važne za zdravlje potrošača, ali i za utvrđivanje tehnološke ispravnosti mlijeka. |
Abstract (english) | In laboratory practice physical, chemical and hygienic properties of milk are determined (somatic cells and microorganism). From physical properties, density, freezing point, acidity are determined by the °SH i pH of the milk. Usually the amount of protein, lactose and milk fat is determined from chemical properties, and then it calculates the amount of non-fat dry matter. From hygienic properties the total number of microorganisms (bacteria) in milk is determined.
With laboratory analysis all physical, chemical and hygienic properties of milk can be determined that are the consequence of defective synthesis, secretion of milk in the mammary gland (changes caused by disease, improper feeding, wrong milking and other factors), milking procedure and milk treatment after milking. In addition to the aforementioned, the everyday practice includes analysis to detect inhibitory substances in
milk, for example residues of pesticides, antibiotics, heavy metals, disinfectants and other substances harmful to the processing of milk and human health. These kinds of analysis are very important for the health of the consumers, but also for determination of technological milk safety. |
