Abstract Turisti traže autentična i jedinstvena te specifična iskustva kada putuju u određenu destinaciju. Vinski turizam, odnosno razvoj enologije u turizmu je specifičan oblik turizma namijenjen posebno odabranim ciljnim skupinama turista koji svoje putovanje prilagođavaju svojim interesima i ljubavi prema enologiji. Tako isti posjećuju područja gdje se uzgaja vinova loza i organizira konzumacija vina. Time turist stupa u neposredni kontakt s kulturom domaćina, razmjenjuje pozitivna iskustva s ljudima, upoznaje kulturne aktivnosti, atraktivnosti i ukupne vrijednosti turističke destinacije.
Razvoj vinskog turizma snažno doprinosi pozicioniranju i prepoznatljivosti određenog turističkog područja. Kvalitetna vina i vinogradski krajolici oduvijek izazivaju posebnu pažnju te su nekome više od usputne stanice na putovanju, oni su im glavna atrakcija.
Predmet istraživanja ovog završnog rada je enologija i turizam, gdje će se prikazati teorijske odrednice vinskog turizma sa aplikativnim primjerima dobre prakse, s naglaskom na Hrvatsku i Istru kao regiju od značaja za vinski turizam. Problem istraživanja odnosi se ispitivanje vinskog turizma i njegova razvoja te koliko je isti atraktivan vinskim turistima.
Abstract (english) Tourists search for authentic, unique and specific experiences when they are travelling to a certain destination. Wine tourism, that means the development of enology in tourism, is a specific form of tourism intended for particularly selected target groups of tourists who adapt their journey to their interests and their love for enology. Thus they visit areas where vines are grown and wine consumption is organized. In this way the tourist comes into direct contact with the host culture, exchanging positive experiences with people, acquainting himself with cultural activities, attractiveness and the total value of the tourist destination.
The development of wine tourism strongly contributes to positioning and recognizability of a certain tourist area. Quality wines and vineyard landscapes have always attracted special attention and are more than a side stop on the trip, they are their main attraction.
The subject of this final study is enology and tourism, where the theoretical determinants of wine tourism with applicative examples of good practice will be presented, with emphasis on Croatia and Istria as a region of importance for wine tourism. The problem of the research is the examination of wine tourism and its development and how attractive it is to wine tourists.
