Abstract
Diplomski rad iz kolegija ''Poduzetništvo u turizmu'' bavi se tematikom ugostiteljstva, odnosno poslovanjem restorana kao ugostiteljskog objekta te samim time i razvojem inovacija u restoranskom poslovanju. Rad započinje uvodom u ugostiteljstvo kao gospodarskoj djelatnosti, gdje se prikazuju usluge koje se putem ove djelatnosti pružaju, kategorizacijom ugostiteljskih objekata te samom organizacijom poslovanja. Zatim se definira restoraterstvo i samo ugostiteljsko posluživanje, objašnjava se pojam inovacije te se navode obilježja inovacije. Te kao završno poglavlje ovog diplomskog rada prikazuju se inovacije u restoraterstvu na primjerima iz prakse, navode se Michelin restorani, daje se ideja za inovaciju u restoraterstvu u Hrvatskoj i prikazuje restoran koji je prednjačio inspiraciji za stvaranje inovativne poduzetničke ideje.
Abstract (english)
Graduate work from the course “entrepreneurship in Tourism” deals with the themes of catering, that is, the business of restaurants as a catering facility and thus the development of innovations in restaurant business. The paper starts with the introduction to catering as an economic activity where the services offered through it are presented, by categorisation of restaurants and the organisation of the business. Then it defines restaurants and catering only, explains the concept of innovation and outlines the characteristics thereof. And the final chapter of this graduate work presents innovations in restaurants on examples of practice, according to Michelin restaurants, gives an idea for innovation in restaurants in Croatia and shows a restaurant that focuses on inspiration for creating innovative entrepreneurship idea.
