Abstract | Ulaskom Republike Hrvatske u Europsku uniju preuzeti su svi standardi koji se
odnose na kvalitetu hrane. To istovremeno povlaci niz odredbi koje se odnose i na
izgradnju i uredenje klaonickih objekata. Kao najvažniji preduvijet za dobivanje
konacnog higijenski ispravnog proizvoda, neophodno je pri izgradnji i opremanju
objekta pridržavati se veterinarskih, sanitarnih i ostalih propisanih normi.
Pri izboru lokacije za izgradnju novog objekta potrebno je obratiti pozornost na
zonu u kojoj bi se on nalazio kako se ne bi ugrozilo okolne objekte, a niti da klaonicki
objekt bude ugrožen od okoline ili drugih proizvodnih objekata. Potrebno je dobro
osmisliti krug objekta kako ne bi došlo do križanja onih cistih s necistim dijelovima
unutar kruga objekta. Treba voditi racuna da izabrana lokacija bude opskrbljena
svom potrebnom infrastrukturom (vodovod, struja i kanalizacija). Posebno se mora
voditi briga o veterinarskoj zaštiti okoliša. Razlog su tome velike kolicine otpadnih
voda i konfiskata koji su potencijalni zagadivaci okoliša.
Opremanje objekta i materijali koji se koriste za izradu opreme moraju biti
izradeni tako da budu otporni na dezinfekcijska sredstva i redovite postupke detaljne
sanitacije, a sve u svrhu sigurnosti životinja, ljudi i hrane.
Prostorije koje služe za prihvat i privremeni smjestaj životinja namijenjenih
klaonickoj obradi, kao i koridori kojima se životinje dopremaju na liniju obrade moraju
biti izgradeni i opremljeni na nacin da ne uzrokuju stres kod životinje te da svi
tehnološki procesi budu izvedeni na najhumaniji moguci nacin uz primjenu pravila
koja se odnose na dobrobit životinja.
S druge strane, unutrašnje uredenje klaonickog objekta mora osigurati putove
koji nece dovesti u pitanje sigurnost hrane.
Samo uz primjenu propisanih odredbi pri izgradnji i uredenju klaonickog
objekta za obradu papkara, te uz primjenu svih relevantnih cimbenika koji su
propisani u našem i preuzetom zakonodavstvu Europske unije, proizvod klaonicke
obrade se može smatrati vrhunskim i zdravim proizvodom u lancu sigurne hrane. |
Abstract (english) | With the accession of the Republic of Croatia to the European Union, all the
standards related to food quality have been adopted. This consecutively requires a
series of provisions regarding the design and equipment of slaughterhouse facilities.
The crucial prerequisite in obtaining the final, hygienically approved product, it is
necessary to meet veterinary, sanitary and other regulatory standards.
When choosing the location for constructing a new facility, it is necessary to
pay attention to the zone it would be located in, so that the surrounding
manufacturing facilities would not be affected, and at the same time, they would not
affect the slaughterhouse facility in any way. The facility perimeter needs to be well
thought out so that the parts of the facility that need to be clean aren’t in contact with
the part where the animals are unloaded. The chosen location needs to be equipped
with the entire necessary infrastructure (water supply, electric power, sewage).
Special attention needs to be paid to environment protection due to large amounts of
waste water and slaughterhouse waste, both being potential pollution sources.
Equipment and materials used in equipment design need to be resistant to
disinfectants and usual sanitary procedures for the purpose of animal, people and
food safety.
Facilities used for the arrival and settling of animals intended for
slaughterhouse processing, as the corridors in which animals are brought to the
process line, need to be built and equipped so that they do not cause stress to the
animal, and that all technological processes are performed in the most humane way,
applying the rules regarding the animals’ well-being.
On the other hand, the interior design of a slaughterhouse facility needs to
provide that food safety isn’t brought into question.
Only by applying regulatory provisions in designing and equipping a
slaughterhouse facility for processing even-toed ungulates and by applying all the
relevant factors prescribed in our national laws and regulations along with the
European ones, a product of slaughterhouse processing can be considered a highquality
and healthy product in the safe food production chain. |
