Abstract Cilj diplomskog rada je utvrditi nutritivni sastav plodova različitih vrsta agruma (grejpfrut, klementina, kumkvat i naranča) i razlike kemijskog sastava pojedinih sorti unutar jedne vrste koje su uzgojene u dolini Neretve na području Opuzena. Analizirani su plodovi iz roda Citrus (slatka naranča, grejpfrut, klementina) te iz roda Fortunela (kumkvat), uzorkovani iz obiteljskog voćnjaka krajem prosinca 2016. godine. More suhe tvari (%), sadržaj ukupne topljive suhe tvari (%), sadržaj ukupnih kiselina (%), pH-vrijednost, sadržaj vitamina C (mg/100 g svježe tvari), sadržaj ukupnih fenola, flavonoida i neflavonoida (mgGAE/100 g svježe tvari), sadržaj β-karotena (μg/100 g svježe tvari) te antioksidacijski kapacitet (μmol TE/kg). Rezultati istraživanja ukazuju kako se najveći sadržaj vitamina C nalazi u crvenoj 'Tarocco' naranči (63,43 mg/100 g), dok se najmanje vitamina C nalazi u kumkvatu (27,82 mg/100 g). Najveći sadržaj ukupnih fenola utvrđen je za naranču 'Skaggs Bonanza' (187,55 mg/GAE/100 g), a najmanje je iznosio kod grejpfruta 'Marsh Seedless' (100,00 mg/GAE/100 g). Sadržaj β-karotena određivan je u plodovima klementine 'Sra 29' (1053,17 μg/100 g) i kumkvata (240,42 μg/100 g). Najveće vrijednosti za antioksidacijski kapacitet određene su u plodovima klementine 'Sra 29' (1702,61 μmol TE/kg), a najmanje u plodovima kumkvata (922,40 μg/100 g).
Temeljem svega navedenog, najveće vrijednosti osnovnog kemijskog sastava određene su u plodovima kumkvata. Najveći sadržaj vitamina C utvrđen je u plodovima crvene naranče 'Tarocco', a najveći sadržaj svih istraživanih bioaktivnih spojeva utvrđen je u plodovima naranče 'Skaggs Bonanza'. Less
Abstract (english) The main goal of this graduate thesis is to establish the nutritional fruit composition of different kinds of citrus fruits (grapefruit, clementines, kumquats and oranges) and the differences in the chemical composition between some sorts within one kind of fruit which have grown in the vally of Neretva on the territory of Opuzen. The following analysis was carried out in purpose of determining the nutritional composition of the fruits: dry matter content (%), content of total soluble dry matter (%), total acidity % pH-value, vitamin C content (μg/100g of fresh matter) total phenol content: of flavonoids and nonflavonoids (mg/GEA/100g fresh matter) content of β-carotene (mg/100g FM) and antioxidant capacity (μmol TE/kg). The research established, the red 'Tarroco' orange contains the highest amount of vitamin C (63,43 mg/100g) and kumquats contain the least (27,82 mg/100g). The highest amount of phenols is found in the 'Skaggs Bonanza' orange (187,55 mg/100g) and the least in the 'Marsh Seedles' grapefruit (100,00 mg/GEA/100g. β-carotene was researched on clementines 'Sra 29' (1053,17 μg/100g) and kumquats (240,42 μg/100g). Clementines 'Sra 29' have the highest antioxidant capacity (1702,61 μmol TE/kg), and the lowest in kumquats (922,40 μg/100g).
Based on the obtained results, we have come to the conclusion that the highest amount of basic chemical composition are determined in the fruits of kumquats. Highest amount of vitamin C is determined in fruits of red orange 'Tarocco' and the highest content of bioactive compounds is determined in the orange fruits 'Skaggs Bonanza'. Less
