Abstract
Istraživane su tri smjese dječje hrane u procesima sušenja na valjcima, u sušioniku s infracrvenim zrakama i tunelskoj sušari. Za određivanje gustoće toplinskog toka pri sušenju na valjcima je uspješno primijenjen modificirani poluempirijski kinetički model. Bi-a korelacija je uspješno primijenjena na izračunavanje parametara prijenosa mase. Pri sušenju u tunelskoj sušari za izračunavanje koeficijenta prijenosa topline je uspješno primijenjena Nu-Di korelacija. Kinetiku sušenja smjesa 1, 2 i 3 neovisno o načinu i uvjetima sušenja najbolje opisuje Pageov model. Ispitan je utjecaj svake od metoda sušenja na gubitak vitamina u smjesama, te promjena boje.
Abstract (english)
Three baby food mixtures in processes of drum drying, infrared drying and tunnel drying were investigated. The modified semiempirical kinetic model was sucessfully apllied to determine the density heat flux during drum drying. Bi-a correlation was successfully applied to determine mass process parameters. For tunnel drying Nu-Di correlation was applied to determine heat transfer coefficient. The drying kinetics of mixtures 1, 2 and 3 is decribed by Page model independent of drying methods and drying conditions. The impact of three drying methods on degradation of vitamins and colour change was investigated.
