Abstract
Primjena visokog hidrostatskog tlaka novija je metoda obrade hrane u prehrambenoj industriji. To je netoplinska metoda kojom se smanjuju troškovi obrade. Smanjenje troškova je jedan od glavnih čimbenika prilikom odabira metode obrade. Cilj ovog rada je bio ispitati utjecaj visokog hidrostatskog tlaka na emulzifikaciju smoothieja s dodanim biljnim uljima. Uzorci su se izložili djelovanju tlaka od 300 MPa tijekom 9 i 15 minuta. Promatrali smo utjecaj visokog hidrostatskog tlaka na promjenu gustoće, viskoznosti, apsorbancije i raspodjelu veličine čestica.
Abstract (english)
The application of high hydrostatic pressure is a newer method of food processing in the food industry. It is a non-thermal method that reduces processing costs. Cost reduction was one of the main factors when processing methods were chosen. The aim of this study was to investigate the effect of high hydrostatic pressure on the emulsification of smoothies with added vegetable oils. The samples were exposed to an elevated pressure of 300 MPa for 9 and 15 minutes. We observed the influence of high hydrostatic pressure on the change in density, viscosity, absorbance, and particle size distribution.
