Abstract | Cilj ovog rada bio je odrediti kemijski sastav plodova jarebike (Sorbus aucuparia L.). Uzorci korišteni u ovom radu izuzeti su s područja Gorskog kotara, Hrvatska sa 6 različitih lokaliteta: Crni Lug, Jasenak, Miškovica, Mala Javornica, Mrzla Vodica i Risnjak. Ukupan broj ispitanih uzoraka bio je 33, a kemijski sastav uključivao je određivanje vode, pepela, masti, proteina i šećera. Prosječni maseni udio vode u ispitanim uzorcima iznosio je 77,86 %, maseni udio pepela 0,97 %, masti 1,52 %, proteina 3,02 % te šećera 4,10 %. Dobivene vrijednosti istraživanja statistički su obrađene deskriptivnom analizom na temelju koje su uzorci uspoređeni međusobno obzirom na lokalitete s kojih su izuzeti te s poznatim literaturnim podacima. |
Abstract (english) | The aim of this study was to determine the chemical composition of mountain ash fruits (Sorbus aucuparia L.). The samples used in this thesis were excluded from the area of Gorski kotar, Croatia with 6 different localities: Crni Lug, Jasenak, Miškovica, Mala Javornica, Mrzla Vodica and Risnjak. The total number of tested samples was 33, and the chemical composition include the determination of water, ash, fats, proteins, and sugars. The average mass fraction of water in the tested samples was 77.86 %, the mass fraction of ash 0.97 %, fat 1.52 %, protein 3,02 % and sugar 4.10 %. The obtained research values were statistically processed by descriptive analysis by which the samples were compared with each other with respect to the sites from which they were excluded and with the known literature data. |
