Abstract
Pitomi kesten (Castanea sativa Mill) pripada u skupinu listopadnog drveća, rjeđe grmova iz porodice Fagaceae. U ovom radu je analizirano je 7 uzoraka od tri francuska kultivara pitomog kestena: Maraval, Marsol i Bouche de Betizac, sakupljenih na području U.Š. Sisak, s ciljem određivanja ukupnog udjela ugljikohidrata u pojedinom uzorku. Za analizu je korištena spektrofotometrijska metoda određivanja ukupnog udjela ugljikohidrata u plodu kestena temeljena na korištenju Anthrona. Dobiveni rezultati bili su u rasponu od 0,35 ± 0,03 do 0,46 ± 0,04 g g-¹ svj.t., što je sukladno sa literaturnim podacima, a primijenjena se metoda pokazala uspješnom. U svrhu preciznijeg određivanja udjela ugljikohidrata te njihovo razdjeljivanje i identifikaciju, preporuča se korištenje drugih metoda poput metode tekućinske kromatografija visoke djelotvornosti (HPLC).
Abstract (english)
Sweet chestnut (Castanea sativa Mill.) belongs to a group of deciduous trees, rarely to bushes from family Fagaceae. Aim of the present study was to analyze total content of carbohydrates in seven samples from three French varieties of chestnut: Maraval, Marsol i Bouche de Betizac, collected on territory of Sisak. Spectrofotomethric method used for the determination of total content of carbohydrates in the fruit chestnuts was based on the use of Anthrone. Range of total carbohydrates in chestnuts was from 0.35 ± 0.03 to 0.46 ± 0.04 g g-¹ of fresh weight, which is consistent with literature data. Applied method was proved to be successful. For the purpose of precise determination of carbohydrates and their identification and quantification, it is recommended to use other methods such as high performance liquid chromatography (HPLC).
