Abstract
Najveći doprinos dnevnom unosu nitrata ima hrana biljnog podrijetla (94 – 95 % ukupnog unosa), osobito zeleno lisnato povrće i pojedine vrste gomoljastog povrća. Zadnjih godina se sve više istražuje o pozitivnom djelovanju nitrata na kardiovaskularno zdravlje, živĉani sustav, ergogeni potencijal kod sportaša, itd. Cilj ovog rada bio je usporediti prehrambeni unos nitrata kod ispitanika (n=16), koji su podijeljeni u skupine vegetarijanaca (n=8) i svejeda (n=8), te takoĊer izraditi bazu podataka s prosjeĉnom koliĉinom nitrata u namirnicama. Kod odreĊivanja unosa, korištena dijetetiĉka metoda bila je 7-dnevni dnevnik prehrane. Ispitanici su bili ženskog spola i dobi od 20 do 28 godina. Rezultati su pokazali da najveći udio nitrata iz hrane dolazi iz hrane biljnog podrijetla, konkretno povrća (77 - 97 % ukupnog unosa nitrata). Dnevni unos nitrata kod vegetarijanaca je prosjeĉno 128 mg, dok kod svejeda iznosi prosjeĉno 101 mg. Za usporedbu, vrijednosti unosa koje se smatraju kardioprotektivnim iznose 60 mg dnevno.
Abstract (english)
The largest contributors to total daily nitrate intake are plant foods (94 – 95 % of total intake), espe cially green leafy and certain root vegetables. In past few years, there are more researches about positive effects of nitrates on cardiovascular health, nerve system, etc. The aim of this thesis was to compare dietary nitrate intake in subjects (n=16), which were separeted into groups of vegetarians (n=8) and omnivores (n=8), and also to make a data base reporting the average amount of nitrates in food. 7-day food record was a dietary assessment method. All subjects were females, 20 to 28 years old. Results showed that the largest part of nitrates from food comes from plant sources, specifically vegetables (77 – 97 % of total intake). Average daily nitrate intake was 128 and 101 mg in vegetarians, omnivores respectively. To compare, cardioprotective daily nitrate intake is 60 mg.
