Abstract
Za pravilan rast i razvoj, pravilna prehrana od iznimne je važnosti u najranijoj dobi. Mnoge majke ne mogu dojiti te zbog navedenog koriste dojenačke formule. Stoga je cilj ovoga rada bio analizirati i usporediti energetski i kemijski sastav šest dojenačkih formula, namijenjenih dojenčadi do 6. mjeseca starosti, te ispitati potencijal primjene blisko-infracrvene (NIR) spektroskopije u praćenju njihove kvalitete. U tu svrhu su korištena dva uređaja: (i) laboratorijski te (ii) prijenosni NIR uređaji (raspon 900 - 1699 nm). Također su mjereni parametri boje, vodljivosti te ukupnih otopljenih tvari. NIR spektrima su pridruženi svi mjereni podaci te podaci o energiji i kemijskom sastavu dojenačkih formula. Primjenom multivarijatnih alata (ispitana je mogućnost neinvazivne NIR spektroskopije u kvalitativnoj i kvantitativnoj detekciji kvalitete. Potvrđen je kvalitativan i kvantitativan potencijal oba uređaja za promatranih 22 parametra, gdje je kvantitativni potencijal procijenjen kao izvrstan za parametre modela: R²> 0,9; RPD> 4 te RER>10.
Abstract (english)
To ensure proper growth and development of infants, proper nutrition is important at an early age. Many mothers, for various reasons, cannot breastfeed and therefore use infant formula. Therefore, the goal of this work was to analyze and compare the energy and chemical composition of six infant formulas. Formulas are intended for infants up to 6 months of age, and the potential of using near-infrared spectroscopy in monitoring their quality is examined. Two devices were used: (i) laboratory and (ii) portable NIR devices (900-1699 nm). Parameters of color, conductivity and total dissolved substances were also measured. Measured data and data on the energy and chemical composition of infant formulas are affiliated to the NIR spectra. Using multivariate tools, the effectiveness of non-invasive NIR spectroscopy in qualitative and quantitative quality assessment was examined. The qualitative and quantitative potential of both devices was confirmed for the observed 22 parameters, where the quantitative potential was assessed as excellent for model parameters: R²> 0.9; RPD> 4 and RER> 10.
