Abstract
U ovom eksperimentalnom radu provedena je mikrobiološka analiza 5 uzoraka napitaka za sportaše, odnosno proteina sirutke 1., 15. i 30. dan nakon otvaranja ambalaže. Proteini sirutke uživaju visoku reputaciju među sportašima, a u novije vrijeme sve češće i kod rekreativaca upravo zahvaljujući njihovom bogatom sastavu esencijalnih nutrijenata i utjecajem na zdravlje. Ipak, u slučaju kontaminacije, proteini sirutke hranjiva su podloga za rast bakterija poput vrsta Salmonella, Listeria monocytogenes, Staphylococcus aureus, klostridija, enterobakterija, bakterija mliječne kiseline, aerobnih mezofilnih bakterija te kvasaca i plijesni. Za dokazivanje rasta navedenih mikroorganizama provedena je metoda praćenja rasta na selektivnim podlogama. Rezultati analize upućuju na prisutnost aerobnih mezofilnih bakterija, prisutnost laktobacila, stafilokoka te enterobakterija dok za ostale kulture rast nije dokazan. Rezultati također sugeriraju kako je mikrobiološka slika analiziranih napitaka za sportaše kontinuirana nakon otvaranja ambalaže kao i 15. i 30. dan. Na mikrobiološku čistoću znatno utječe predobrada mlijeka kao i njegova manipulacija tijekom proizvodnog procesa.
Abstract (english)
This experimental paper work was done for the purpose of conducting a microbiological evaluation of 5 different sports drinks, i. e. whey proteins including 1 st, 15th and 30th day after opening the package. Whey proteins are widely used among elite athletes because of their nutritional value and positive impact on health, but also among recreational athletes who do not compete. However, in the case of contamination, whey protein is a good substrate for the growth of various microorganisms including Salmonella, Listeria monocytogenes, Staphylococcus aureus, enterobacteria, lactic acid bacteria, aerobic mesophilic bacteria, moulds and yeasts. The growth monitoring method was carried out on a selective substrate. The results of the analysis indicate the presence of aerobic mesophilic bacteria, lactic acid bacteria, staphylococci and enterobacteria, while the presence of other cultures were not proven. The results also suggest that the microbiological picture of the analysed sports drinks were continuous even 15th and 30th day after opening the package. Regarding the microbiological safety of whey protein, a key component is the proper handling of milk during the production process.
