Abstract
U ovom završnom radu opisan je tijek vinifikacije crnih vina, od samog prijema grožđa do završne alkoholne fermentacije. Crna vina se dobivaju paralelnim postupkom maceracije i alkoholne fermentacije mošta. Klasična vinifikacija crnih vina provodi se maceracijom krutih dijelova grozda (kožice, sjemenke i eventualno peteljke) u fazi fermentacije mošta. Klasične faze u vinifikaciji crnih vina su: muljanje - runjanje i punjenje posuda; maceracija i alkoholna fermentacija; odvajanje mošta od taloga ocjeđivanjem i prešanjem; završna alkoholna i eventualno malolaktična fermentacija. Također je opisana fermentacija vina metodom Délestage. Ova metoda izvodi se na način da se u potpunosti iz posude pretoči mošt u fermentaciji i ulijeva u privremeni spremnik.
Abstract (english)
This final paper describes the course of vinification of red wine, from harvesting of grapes itself to the final alcoholic fermentation. Red wine is made from parallel procedure of maceration and alcoholic fermentation of must. Typical vinification of red wine is conducted through maceration of grape solids (skin, seeds and petiole) in the stage of must fermentation. Common stages of red wine vinification include: crushing and pressing of grapes, fillingvats, maceration and alcohol fermentation, separating must from sediment by draining and pressing, and final alcohol and (optional) malolactic fermentation. The paper also describes wine fermentation by means of the Delestage method. Delestage is carried out in such a way that, during fermentation, the must is completely decanted from the vat into a temporary container.
