Abstract
Organski uzgojene sjemenke biljaka uljarica i orašasti plodovi te proizvodi njihove prerade su zbog zadržanih nutritivnih vrijednosti, boljeg okusa i pozitivnih učinaka na zdravlje sve omiljeniji današnjim potrošačima. Mnogi od tih proizvoda se mogu dobiti uz minimalno procesiranje, a budući da nisu termički tretirani, njihova je mikrobiološka sigurnost upitna. Stoga je ovaj rad bio mikrobiološka kontrola tih proizvoda i usporedba dobivenih parametara s normama koje propisuje Zakon o hrani (NN 81/2013). Provedene mikrobiološke metode udovoljavaju zahtjevima propisanim hrvatskim standardima na temelju ISO-9001 standarda kvalitete. Ukupno je prikupljeno 40 uzoraka, uključujući 6 uzoraka hladno prešanih ulja, 9 organskih maslaca, 6 organskih proteinskih proizvoda, 8 vrsta sjemenki uljarica i orašastih plodova te 11 mješavina sjemenki uljarica i cjelovitih orašastih plodova za kruh i krekere koji su analizirani na aerobne mezofilne bakterije, bakterije iz porodice Enterobacteriaceae, plijesni i kvasce. Uzorci su također pregledani na prisustvo patogenih vrsta Salmonella i Listeria monocytogenes, te sulfit reducirajuće klostridije, ovisno o normama propisanim Zakonom. Rezultati su pokazali da su izmjerene vrijednosti bile ispod propisane normativne vrijednosti te su namirnice udovoljavale zahtjevima.
Abstract (english)
Organically grown oilseeds and nuts and their products are due to the retained nutritional value, the better taste and the positive effects on health all the more favored today's consumers. Many of these products can be obtained with minimal processing, and since they are not thermally treated, their microbial safety is questionable. Therefore this work was the microbiological control of these products and the comparison of the obtained parameters with the standards prescribed by the Food Hygiene and Food Microbiological Laws (NN 81/2013). The microbiological methods meet the requirements of Croatian standards based on ISO-9001 quality standards. A total of 40 samples, including 6 samples of cold pressed oils, 9 organic butters, 6 organic protein flour, 8 kinds of oilseeds and edible nuts, and 11 mixtures of oilseeds and edible nuts for bread and crackers, were collected and analyzed for aerobic mesophylic bacteria, bacteria from the family of Enterobacteriaceae, molds and yeasts. Samples were also examined for the presence of pathogenic species of Salmonella and Listeria monocytogenes, and sulphite reducing clostridia, depending on the standards prescribed by the Law. The results show that the measured values were below the prescribed normative values and the foods met the requirements.
