Abstract
Prema Zakonu o kontaminantima (NN RH 39/2013) i Uredbi Komisije (EZ) br. 1881/2006 o utvrđivanju najvećih dopuštenih količina određenih kontaminanata u hrani propisana je najveća dopuštena količina metala (olovo, kadmij, živa i kositar) u hrani. Slijedom toga, razvijene su elektrokemijske tehnike za identifikaciju i kvantifikaciju metala u hrani. Najčešće primjenjivane elektrokemijske tehnike u ovu svrhu su protočna kronopotenciometrija i tehnike s otapanjem pretkoncentriranog analita, a uz uporabu metode standardnog dodatka. Zadatak ovog završnog rada je bio definirati elektrokemijske tehnike, njihovu podjelu i instrumente te opisati tehnike protočnu kronopotenciometriju i tehnike otapanja pretkoncentriranog analita uz naglasak na primjenu u identifikaciji i kvantifikaciji metala propisanih Uredbom Komisije (EZ) br. 1888/2006 na neke od napitaka.
Abstract (english)
The Law on Contaminants (Official Gazette of the Republic of Croatia 39/2013) and Commission Regulation (EC) no. 1881/2006 on determining the maximum permitted amount of certain contaminants in food prescribes the maximum permitted amount of metals (lead, cadmium, mercury and tin). Consequently, electrochemical techniques had been developed for the identification and quantification of metals in food. The most commonly applied electrochemical techniques for this purpose are flow techniques, with the use of the standard addition method. The aim of this final thesis was to define electrochemical techniques, their division and instruments, and to describe flow chronopotentiometry techniques and preconcentrated analyte dissolution techniques with an emphasis on application in the identification and quantification of metals prescribed by Commission Regulation (EC) no. 1888/2006 on some of the beverages.
