The aim was to make a film based on biopolymer starch with added apple polyphenols, which achieves its active function by releasing polyphenols. Polyphenols were extracted from apples by using ultrasound, and identified and quantified with the high-performance liquid chromatography (HPLC). Ten compounds belonging to flavonols, phenolic acids, flavan-3-ols, and dihydrochalcones were identified in the apple extract. The most abundant polyphenols in apples were flavonols (55%) and phenolic acids (23.5%). Polyphenols were adsorbed onto the starch. Polyphenolic groups that were most abundant in apples were adsorbed on starch in a higher percentage (flavonols 68%, phenolic acids 20%). Foils were prepared from starch with adsorbed apple polyphenols, and from pure starch and aqueous apple extract. The water content of all films and their solubility in water were similar or showed slightly higher values than the films prepared in earlier studies. Water content and water solubility of foils showed the increase with the increase of the amount of glycerol. Polyphenols were released from the foils into 50 % ethanolic solution, which shows the potential for active function of foils. Given the slightly better ability to release polyphenols, the production of the film from pure starch and aqueous polyphenol extract proved to be a more effective method of film preparation. Intensive research into the properties of foils and improvement of the actual active function is needed.
