Abstract
Tradicionalna gastronomija predstavlja tradicionalna jela kako države, tako i pojedinih regija, gradova, mjesta i sl. U današnje vrijeme samo se neki pridržavaju tradicionalne prehrane i spremanja iste. Kvaliteta i sigurnost hrane je znanstvena disciplina koja opisuje upravljanje, pripremu i skladištenje hrane. Svrha gastronomije je očuvati ljudsko zdravlje najboljom mogućom prehranom i osigurati uživanje u životu i jelu. Svrha i cilj rada su pridržavanje uvjeta u ugostiteljstvu za pripreme tradicionalne hrane na tradicionalni način, a da se pridržavaju potrebnih sigurnosnih mjera kod pripreme hrane. Kako se turistički trendovi mijenjaju iz dana u dan, tako i tradicionalna prehrana dolazi do izražaja za turiste koji, osim obilaska različitih turističkih lokacija, dolaze radi upoznavanja tradicionalne prehrane određene države ili regije.
Abstract (english)
Traditional gastronomy is the traditional dishes of the country, as well as individual regions, cities, towns, etc. Nowadays, only some adhere to the traditional diet and its preparation. Food quality and safety is a scientific discipline that describes the management, preparation and storage of food. The purpose of gastronomy is to preserve human health with the best possible diet and ensure the enjoyment of life and food. The purpose and goal of the work are to adhere to the conditions in the catering industry for the preparation of traditional food in the traditional way and to adhere to the necessary safety measures when preparing food. As tourist trends change from day to day, the traditional diet comes to the fore for tourists who, in addition to visiting various tourist locations, come to get to know the traditional diet of a particular country or region.
