Abstract
Tehnologija trodimenzionalnog (3D) ispisa hrane omogućuje proizvodnju funkcionalne i personalizirane hrane prilagođenog oblika. Cilj ovog rada razvoj je receptura smjesa funkcionalnih mliječnih proizvoda pogodnih za 3D ispis na principu ekstruzije te provjera stabilnosti ispisanih 3D oblika tijekom skladištenja. Smjese su načinjene od svježeg posnog ili polumasnog sira te praha cikle i otopine guar gume u različitim koncentracijama. Određeni su reološki parametri (prividna viskoznost, indeks tečenja, koeficijent konzistencije), pH, iskorištenje te brzina ekstruzije smjesa, a dobiveni rezultati statistički su obrađeni. Utvrđen je statistički značajan utjecaj dodatka otopine guar gume i praha cikle na reološke parametre. Veće iskorištenje smjesa te veća brzina ekstruzije zabilježena je kod smjesa posnog sira. Provedena je mikrobiološka analiza i određivanje promjene boje 3D ispisanih oblika pakiranih u modificiranu atmosferu te skladištenih pri 4 °C tijekom 21 dana. Patogene bakterije nisu detektirane niti kod jednog uzorka za vrijeme skladištenja. Utvrđena je primjetna promjena boje svih skladištenih oblika.
Abstract (english)
Three-dimensional food printing (3DFP) technology enables the production of functional and personalized food with a customized shape. The aim of this work is to develop a recipe for functional dairy products suitable for extrusion-based 3DFP, and to verify the stability of the 3D-printed samples during storage. The rheological parameters (apparent viscosity, flow index, consistency coefficient), pH, utilization and extrusion speed of the mixture, made from fresh skimmed or partially skimmed cheese, beetroot powder and guar gum solution in different concentrations were determined and statistically evaluated. A statistically significant influence of the addition of guar gum solution and the beetroot powder on the rheological parameters was found. A higher utilization of the mixture and a higher extrusion speed were observed for the skimmed cheese mixtures. Microbiological analyses and determination of color change of 3D-printed samples packed in a modified atmosphere and stored at 4 °C for 21 days were performed. No pathogenic bacteria were found during storage and a clear color change was detected.
