Zeta potential or electrokinetic potential is defined as the potential at the distance of the shear surface and represents a physical property on the surface of a molecule. The value of zeta potential is affected by pH, concentration and conductivity. Knowing the zeta potential allows understanding and controlling the stability of molecules, predicting the most stable form of a molecule. The stability of a molecule depends on the zeta potential and the charge on the surface of that molecule. The aim of this work was to determine the value of the zeta potential of the model of chlorogenic acid — β-glucan, chlorogenic acid solution and β-glucan solution and to predict the most stable behaviour of the model of chlorogenic acid — β-glucan. The zeta potential of the models and solutions were monitored at different pH values and in different concentrations. The recorded UV/Vis spectra of the chlorogenic acid (25 mg L-1) — β-glucan (5 mg L-1) model showed two absorption maxima in the wavelength range from 326 to 362 nm and at a wavelength of 984 nm and could be attributed to the presence of chlorogenic acid and β-glucan. The chlorogenic acid (25 mg L-1) — β-glucan (5 mg L-1) model proved to be the most stable at pH 10 (ζ = -28 to -30 mV) and in the second hour of the experiment (ζ = -32.9 mV). Changes in pH, different time, concentration affect the appearance of the UV/Vis spectrum and the value of zeta potential of the investigated model.
